About This Wine
Appearance
Deep mahogany red with copper reflections, showing the richness of its liqueur wine base and long barrel aging. The texture is dense and silky, forming slow tears in the glass that hint at its concentration.
Scent / Nose
An intensely expressive aromatic profile: dried figs, roasted hazelnuts and green walnuts dominate the first impression. Beneath these, subtle oxidative notes from the Jerez barrels emerge, alongside warm spices and a whisper of sweet botanicals.
Palate / Taste
Warm, enveloping and liqueur‑like, with a beautifully layered structure. The palate opens with liquorice, medicinal herbs and a refined bitter touch. The texture is velvety, leading into a long, elegant and spicy finish that showcases its complexity and barrel influence.
Food Pairings
Perfect for slow, contemplative sipping. Pair with:
- Smoked fish (salmon, mackerel, eel)
- Cured cheeses and strong blue cheeses
- Nuts, dried fruits and dark chocolate These combinations highlight its liqueur character and enhance its warm, spiced profile.
- Cigars and fine tabacco.
Storage Temperature
Store between 12–16°C in a cool, dark place. Once opened, keep refrigerated to preserve aromatic intensity and freshness.
Serving Temperature
Serve well chilled, ideally between 6–10°C, to balance sweetness, enhance herbal notes and maintain its elegant bitterness. Pour over ice with a slice of orange and an olive as garnish. This vermouth makes an exceptional Manhattan cocktail.
Coupage
A unique blend featuring:
- A sweet liqueur wine in the style of Porto, specifically Tarragona Clásico, aged 5 years in oak vats
- A carefully crafted infusion of botanicals This combination gives the vermouth its signature depth, sweetness and aromatic complexity.
Aging Time & Barrel Type
Aged for 18 months in Jerez barrels, which contribute oxidative notes, nutty aromas and a refined, spicy finish.
